Ab-ghoosht, the most traditional Iranian “soup”, for the lack of a better word, is a rich spicy stew of meat and beans and pretty easy to cook.
Ingredients (serving five):
- 500 gr. cut and washed lamb or veal, and some bones.
- 1 cup chick peas
- 1 cup red kidney beans
- 3-4 medium potatoes (skinned and cut in two)
- 1 large onion (sliced)
- 2 glasses V8 ,
- dried lime (limo amaani)
- 1 tbsp turmeric.
- salt and pepper
Recipe: 1. Soak the beans overnight. Discard the water and cook with fresh water and a pinch of salt until almost done. Soaking helps speed up the cooking process; more importantly, it diminishes the troublesome consequences of eating gas-producing beans! If soaking is not a possibility, bring the water to a boil and discard at least once before letting the beans cook. It would do the same trick.
2. Pour meat, bone, onions in a big pot and cover with water (three glasses). Add turmeric, salt and pepper and cook until almost done. Take the bone out 3. Add beans, and potatoes to the main pot and cook for half an hour. Then, add V8 and dried lime and cook for another 15 minutes or so. At this stage, everything except dried limes and potatoes are nearly mush and you should still have about three glasses of stew left. Squeeze a couple or all dried limes and adjust the taste to your liking. When ready to serve, separate the stew (let some beans and a few onions stay in the stew, though, and do leave all limes in the stew) and keep it warm. Take everything else in the pot on the floor for mashing. This is the fun pat!

The mashed meat/beans/potatoes, with a bit of stew to make the mashing process easier, is called goosht koobideh (meaning mashed meat), which is taken with bread. The stew part is sometimes taken like a soup with or without flat bread (usually pita if you are outside Iran). Some people tear up pieces of pita bread and soak them in the stew before eating it; this is called tilit.
Always good with raw onions and fresh herbs, yum!!
