I use the recipe for barbari bread to bake thin crust pizza at home, without having the professional equipment such as pizza stone. It turns pretty decent and does not take much time.
Ingredients for Pizza dough: Bread Flour: 3+1/4 cups. Water: 1.5 cups. Active Dry Yeast: 1 pouch or 2+1/4 tsp. Baking Powder: 1 tsp. Salt: 2 tsp. Sugar: a pinch. Whole wheat flour: 1/2 cup.
Ingredients for Pizza: Pizza sauce, 6 tbsp. (or 4 tbsp of tomato’s paste dissolved into 2 tbsp hot water). Olive oil, 2 tbsp. Mazzarella or Parmesan cheese, 400 gr., shredded . Toppings: absolutely of your choice! I use 1 medium green bell pepper, 7-8 mushrooms, few pieces of sundried tomatoes,1 red onion – all thinly sliced of course.
Method: 1. Please follow steps 1-11 for barbari bread here. After you divided the dough into two round balls, prepare the oven: Place one oven rack in the bottom and the second rack in the middle of the oven. Use an aluminum baking pan and make several venting holes in it. Place it on the bottom oven rack. Preheat oven on 400 F. for 15 minutes.
2. Go back to your dough: it is divided into two balls and left to sit for ten minutes, right? Now, on a slightly floured hard surface push down each ball, and stretch in all direction to form a round shape. Use a rolling pin, starting from center and working outwards. Repeat until you get a perfectly round and flat crusts. Brush the top of each crust with olive oil. Transfer them (probably one at the time if your oven is not large enough) on the pan in the lower rack and bake for 15 minutes.
3. Take the dough (placed on the pan) out, but keep the oven going with closed doors. Spoon the pizza sauce (or tomato paste) sprinkle a thin cheese layer, followed by your desired toppings. Beware not to heap the bread with too much toppings or the crust will not have sufficient room to get crisp enough. Sprinkle the final, thick cheese layer. 4. Transfer each loaded crust back to the oven, this time on the middle rack, though. Bake for 20 minutes or until the crust is crisp and slightly golden and cheese is melted.
