Mixed quinoa with zucchini

I am going to buy it soon, but from what I figured out by skimmed through, it looked like a combination of white red and black quinoa would go with absolutely anything you could imagine: be it salads, side dishes or main dishes , with fried and grilled meat, chicken and fish.
All I want to say is that quinoa is good for your health. It is pretty and it knows no limit! I already posted the most basic type here. And what I am about to share is something I learned from my sister, tried successfully and served as a side dish with grilled salmon. The combination was just wonderful.
Ingredients: (for a medium size bowl, serving 3-4 as side dish)
- White quinoa, 1 cup. Red quinoa 1/3 cup.
- Water, 2 and 2/3.
- Zucchini, 2 medium size, halved lengthwise into three each.
- Garlic 1 clove, crushed.
- Olive oil, 1 tbsp. Lime juice 1 tbsp.
- Freshly chopped parsley,1 tbsp.
- Salt to taste.
Method: Grill both sides of your zucchini for 10 minutes each. Cut them into small cubes, then marinate in a small bowl containing a mixture of crushed garlic, olive oil, lime juice and salt. Now, get busy with your quinoa! The type of quinoa you need is shown in the picture. To cook, just follow the instruction on the box. I personally cook white and red separately just to be on the safe side. For each quinoa type, first wash and rinse.
Add two parts water to one part quinoa (that is, for your white quinoa you add two cups of water to one cup quinoa, and for your red quinoa, you add 2/3 of water to 1/3 quinoa). Add a pinch of salt, cover and bring to a boil. Remove the lid and simmer for 10-15 minutes, or until water is absorbed and quinoa is fluffy. Allow to cool.
Once both types of quinoa is ready, gently mix the two with zucchini cubes. Depending on how tasty you like the salad/side dish, you may choose to add or not to add the marinate sauce to the main ingredients. I do. Use chopped parsley for garnish. It is quite pretty even without make up though.
