Mint-vinegar syrup, شربت سکنجبین sharbat sekanjebin

Ingredients – serves 2
- 2 cups water
- 1 cup sugar
- ¼ cup white vinegar
- 1 big bunch of fresh mint
- 2 slicing cucumbers, washed and grated (do not peel)
- 1 lemon, sliced
- Few ice cubes
For the syrup:
In a medium size pot, add sugar and water. Place over medium heat and stir till sugar is dissolved and the syrup comes to a soft boil. Add mints and vinegar and turn the heat to medium for 45 minutes. Stir occasionally. Now, pass the syrup through colander and let cool.
To prepare the drink:
Add ice cubes to the bottom of two glasses. Divide grated cucumbers into two and add on top of the ice cubes in glasses. Fill the glasses with syrup and garnish with lemon rims.
