This colorful fish dish is improvised by my sister and besides tasting deliciously sour, helps lift your spirit, especially when accompanied by spinach-avocado-grapefruit salad (see picture below).
- Tilapia or Haddock, 4 fillets.
- Onion, 2 white medium, thinly sliced.
- Cranberries, (frozen or fresh ), 1 cup.
- Turmeric, 1 tbsp.
- Salt and oil.
Method: The cooking is Persian style, with the fish being fried as people in Southern provinces of Iran do. Start with the more time consuming part: frying onions in crispy golden style. Please read the instruction here.
Secondly, if the fish were frozen, defrost, and pat them dry thoroughly. Sprinkle with salt and roll in turmeric. Pour oil in a frying pan and when hot, fry both sides of fillets briefly over high heat. Transfer into an oven safe dish.
Clean your pan with a kitchen paper towel and sauté the berries ever so briefly – long enough only to get the color and juice out. Top the fish with fried onions and berries and place in oven to warm up everything before serving.
