Sabzeh (grass), as you might know, is one of the seven specific items starting with the letter “S” which goes in the Norooz table setting. It is also an item which needs to be prepared in advance – just about now, maybe a bit later – let’s say two weeks prior to Norooz.
The common types of seeds to grow for Norooz as sabzeh, are wheat, lentil, cress and green mung beans, with the last three crops growing much faster than wheat. Traditionally, though, growing wheat is the norm and this is the one I always go for. Not difficult at all; only, just like Persian cuisine, growing wheat requires investing time, along with patience and attention.

I was five and he was six
We rode on horses made of sticks
He wore black and I wore white
He would always win the fight
Bang bang, he shot me down
Bang bang, I hit the ground
Bang bang, that awful sound
Bang bang, my baby shot me down.
Seasons came and changed the time
When I grew up, I called him mine
He would always laugh and say
“Remember when we used to play?”

We in Montreal, though, would claim an exclusive right over this dish, as it is prepared in a specific ways by Lebanese chain fast food restaurants, most notably Amir Restaurant. I have been to Amir and taken out its sandwich and plate shish-tauk dishes often enough to come up with my own recipes for this easy and delicious sandwich!

Flowering Tea

A clip of what is known as the Chinese flowering tea or blooming tea. In actuality, it takes about five minute for the process to complete. My clip is a bit faster – two minutes. Pretty amazing, isn’t it!?
